OUR STORY

Liberty Bakery + Cafe has been a fixture in the Main Street community for three decades. This is its third iteration, but much has stayed the same to honour those who carried the torch before.

Elizabeth Starr is the owner/operator of the bakery. Liberty’s artistry endures through every element of their baking—from the adorable and quirky cookies featuring Totoro (a Liberty classic!), Moomin characters, mushrooms, aliens, butterflies and more to the chocolate croissants, specialty flatbreads and focaccia.

Elizabeth is a mom, wife, and chef. Elizabeth and the whole Liberty team are dedicated to beautiful food made with quality ingredients.

MEET THE TEAM…

  • Owner/Operator

    The heart and spirit of Liberty. Dedicated to our team, mutual respect and creating a space that feels like home for all.

  • Our steady captain

    Works night and day, fixes everything, wants to be hired, (he’s our Matty Matheson - have you watched ‘The Bear’?!), and makes no grumbles when things break. Calm as a cucumber.

  • FOH Manager

    Our go-to guy, knows the place like the back of his hand, coffee wizard, music extraordinaire, best style, and friend to all.

  • Is it Buhler’s day off? Or is everyday just a party with Clay? Clay is the most jazzy, thoughtful and foundational person of our team.

  • Our in-house clothing designer. Badass barista. Quiet but thoughtful. Can gently handle any situation.

  • Style icon, sweetheart and sentimental music lover.

  • Hired for FOH but was drawn to BOH where her task-oriented mind can play. A ripping addition and best spirit.

  • Our lamination homie. Previous BOH manager at Livia. She moves incredibly quick while making it all seem like a seamless breeze. It’s magic.

  • Her astrological sign is cancer, she’s a deep well of feelings and a total MacGyver. When she’s not working BOH, she’s probably listening to an ABBA record or playing her banjo on the shag carpet of her rest + relaxation room.

  • This bread wizard hails from the Netherlands and has cooked in Australia, Asia, Netherlands and Canada. We’re so happy he’s here with us in Canada and that he loves making pasta and anything flour related. Lucky us!

  • Bringing the magic and creativity of our physical space to the virtual realm. Her smile will light up any room no matter the square footage; just try her.

  • Every day, 9-4. Even stat holidays! Closed on Christmas and National Day for Truth and Reconciliation.

  • Great question. We source locally and as organically as possible, including our milk and whole grain flours from Flourist.

  • Yes we do! Although our menu changes seasonally, we ensure there are options available for everyone.

  • You may notice that our labels specify a percentage of whole grain flour used in our baking. ‘Whole grain’ means that the bran and germ are retained through the milling process, whereas conventional ‘white’ flour removes these components in favour of the endosperm. Since twenty of the twenty-one micronutrients found in most grains are found in the bran and germ, whole grain flour ensures a more nutritious, tastier product.
